A small bite of food to amuse the mouth and invigorate the palate

Poached Pear and Baby Arugula Salad
With spiced walnuts, Gorgonzola dolce and a Chianti reduction.

Tega Hills Farm Mixed Greens Salad
With a pistachio tuile and goat cheese boursin, roasted tomatoes and a banyuls vinaigrette.

Roasted Butternut Squash and Mascarpone Soup
Finished with a pumpkin seedf dukkah.

Pan Seared Beef Tenderloin
Pan seared Certified Angus Beef fillet over pancetta and green pea risotto with a sweet onion marmalade, topped with creamy gorgonzola dolce and Tempranillo jus.

Duo of Wild Boar
Grilled tenderloin and crepinette of shoulder braised with porcini mushrooms served over chestnut risotto, rainbow Swiss chard and topped with black currant marmalade.

Roasted Half Chicken from Springer Mountain Farms
Marinated with our blend of savory spices. Served with truffle mashed potato.

Red Snapper Fillet alla Livornese
Pan seared with tomatoes, onions and olives accompanied by Tuscan style roasted sprin asparagus.
